We did a bang up job and our presentation and pig was
the absolute best we have ever done.
Judging was supposed to start at 10:00am and we had to have our pig and all
done by then. At 10:00 we had it all finished and the internal temps were 195
in the shoulders and 185 in the hams.
Judges showed up an hour and 15 minutes later, and our temps dropped to
about 170 and 175 or so. I’m sure that didn’t help our chances.

Thanks to them it was a great success.
They made the trip very fun. We made some friends and met a lot of great BBQ
folks down there. Most everyone had competed before many times and it
certainly was top notch competition.
The judges found out that it was our first competition too so that didn’t
help either I think in our placing.
We are very proud of our placing as a matter of fact. The guy beside us was a
long time competitor and he finished 4 places behind us. He took second last
year and had won it twice in the past. The ECU students in front of us did a
good job too and they finished 72.
