Kent's Famous All~Meat Sweet Chili Recipe
The Necessary Ingredients
  • 5 lb.s of ground beef
  • 1/4 cup of olive oil
  • 6 dashes of black pepper
  • 1 tbsp. of Worcestershire Sauce
  • 1 29 oz. can of plain tomato sauce
  • 1 12 oz. can of plain tomato sauce
  • 1 12 oz. can of plain tomato paste
  • 3 pinches of cinnamon
  • 1/2 tsp. of onion salt
  • 1/2 tsp. of garlic salt
  • 4 level tbsp. salt ( Warning!
    This may be too much salt for some folks;
    if four tablespoons of salt balanced against
    five pounds of groundbeef and other
    ingredients sounds like too much salt
    to your taste, then please adjust to your
    personal preferences accordingly, Thank You! )
  • 1 hefty pinch of allspice
  • 1 heaping tbsp. of chili power
  • 4 beef bullion cubes
  • 1 tbsp. of paprika
  • 1 tsp. of Texas Pete
    or similar liquid hotsauce
  • 1/2 tsp. of mustard
  • 4 tbsp. of granulated sugar
  • 1/2 tsp. of lemon juice
  • 2 tbsp. of orange juice
  • 1/4 cup water
The Sequence Of Cooking



Timeclock: 0hr:00min


  • Into an 4-quart or larger crockpot slowcooker (I've used a RivalŪ Crockpot for some years now), pour the 1/4 cup of olive oil, swishing it around some, coating the sides as much as possible. You may also use a larger, lidded cookpot on a stove eye like my wife does when she makes her version of this chili, but the cooking times won't be as applicable, they may be slower or faster, depending.
  • Add 1 tbsp. of salt, 1/4 tsp. of Worcestershire Sauce, 2 dashes of black pepper.
  • Press 2-1/2 pounds of the 5 pounds of ground beef into the pot, firming it down, creating a level surface middleway.
  • Atop that, add another 1 tbsp. of salt, 1/2 tsp. of Worcestershire Sauce, 2 dashes of black pepper.
  • Add the remaining hamburger, again pressing it to create a flattened top surface.
  • Add the remaining 2 tbsp. of salt, 1/4 tsp. of Worcestershire Sauce, 2 dashes of black pepper.
  • Let cook on "HI" for one hour.



Timeclock: 1hr:00min


  • After one hour's undisturbed cooking, begin to break up the forming plug of cooked hamburger, using a large, flat-tipped cooking spoon.
  • Continue to check on it while it cooks in its hot grease, breaking the chunks of burger up into finer and finer pieces, stirring slightly every 5-10-15 minutes or so, for the next hour and one-half.

  • Make sure all the hamburger is thoroughly cooked, that all the remaining chunks have no pink in their middle.
  • Using a soup ladle, drain as much of the grease off as possible. Typically, I'll fill up a large soup tureen completely with unwanted grease. Press the ladle down into the middle of the hamburger to form a crater to ease the grease down to it.
  • Add the 29 oz. and 12 oz. cans of plain tomato sauce, and the 12 oz. can of plain tomato paste, stirring thoroughly.
  • Add 3 pinches of cinnamon, 1 pinch of allspice, 1 tbsp. of chili powder, 4 beef bullion cubes, 1 tbsp. of paprika, 1/2 tsp. of mustard, 4 tbsp. of granulated sugar, 1/2 tsp. of lemon juice, 1 tbsp. of orange juice, 1/4 tsp. of onion salt, 1/4 tsp. of garlic salt, stir well from the bottom and middle.
  • Let cook one hour.



Timeclock: 3hr:30min


  • Stir well, then add 1/4 cup of water, 1 tbsp. of orange juice, 1/4 tsp. of onion salt, 1/4 tsp. of garlic salt, stirring well from bottom and middle. This should fill the 4-quart crockpot close to the very top, close to overflowing; stir slowly.
  • Continue to cook on "HI" for thirty more minutes, then it's ready to eat. You can now turn it on "LOW" and let it simmer slowly and stay warm for hours more, without affecting flavor balance.
